This is one of my favorite meals from Purple carrot so far. It was extremely simple to make and I loved every bite. I didn't use the chilies as I am not a huge fan of spicy chili peppers. And I have by accident rubbed my eyes with that chili juice on my hands and have paid dearly for it. So I just left it out of the recipe... and I didn't miss it. But you might enjoy it ...so add them as you like.

                                                                                 Another Great Recipe for Stopping Heartburn

Ingredients

  • 2 sweet potatoes
  • 2 garlic cloves
  • 1/2 cup cashews
  • 2 tbsp rice vinegar
  • 2tsp agave
  • 1 tsp tamari
  • 1 tsp Aleppo pepper - caution this is spicy hot
  • 8 oz Swiss chard
  • 1 lime
  • 1 Thai chili - caution this is spicy hot
  • 4 oz sauerkraut

Instructions

  • 1 - Preheat the oven to 425 degrees F. halve the sweet potatoes lengthwise and transfer to a baking sheet. Rub these slices with 2 tbsp of vegetable oil, sprinkle with a dash of salt and pepper. Bake these with the cut sides face down until tender... usually 22-26 minutes.
  • 2 - Peel the garlic cloves and add to a blender. Measure only 1/3 of a cup of the cashews and add to the blender along with the rice vinegar, agave, tamari, Aleppo pepper, 2 tbsp of olive oil and 4 tbsp of warm water. Blend the spice cashew sauce until smooth. Taste and add salt as necessary.
  • *** Hint - the Aleppo pepper is very spicy, Use to your discretion and your tolerance.
  • *** Hint #2 - If you like more garlic, then add another clove.
  • 3 - Thinly slice the Swiss chard stems and roughly chop the leaves. halve the limes. Juice one of the halves and cut the other half into wedges. Thinly slice the Thai chili. Place the remaining cashews in a large skillet over medium heat and toast, usually 3-4 minutes. Transfer the roasted cashews to a cutting board and roughly chop.
  • *** Hint - be careful to wash your hands very well after touching the chilies. If you accidently touch your face or eyes, you are in some serious trouble.
  • 4 - When the sweet potatoes are done, heat the skillet over medium-high heat with 1 tsp of olive oil. Add the chopped Swiss chard leaves and sliced stems, and cook until wilted...usually 3-4 minutes. Add the lime juice and a dash of salt.
  • 5 - Divide the sauteed Swiss chard between large plates. Top with the roasted sweet potatoes and the sauerkraut. Drizzle everything with the spice cashew sauce and sprinkle with the toasted cashews and sliced Thai chili. Serve with the lime wedges.

Hello and Welcome,

Thank you for stopping by and checking out our site. I can assure you that if you are looking for an easy answer to stopping your heartburn or acid reflux, then you have come to the right place. I have suffered from acid reflux now for at least 10 years. I have tried almost everything to stop this… from Tums to Zantac to to other medications that are over the counter as well as some prescription drugs as well. It always comes back to severe burning and pain in my throat and stomach. I have posted several articles on some of the cause and some of the natural cures for this.  from Apple Cider vinegar to eating better to the foods that actually can cause acid reflux pain or heartburn pain. Please check them out if they look like they might help you.

Healthy eating

I have recently discovered a new, more healthy approach to curing acid reflux. And that is eating better. Removing the major culprits that are actually causing my pain. The worst of these culprits is bread, crackers, cookies, cakes, … ANYTHING that has wheat and gluten in it. And that is a real bummer because I am a cookie monster. I have been known to eat an entire bag of Oreo’s in one sitting. However, there are new options that have really helped me with my breads addiction. The first thing I have changed is I now eat Udi’s Gluten Free Breads… my personal favorite is the Millet bread with Chia seeds. Personally I love it. They have other breads as well that you can try. You will see that these are amazing alternatives to real breads that are sold in stores.

Also, I have now discovered a meal delivery company called Purple Carrot. It is a strictly vegan food preparation company. But man-oh-man… this place is the bomb. ALL of my acid reflux symptoms have completely disappeared. And I am actually learning how to cook vegan foods… because they send you the meals and the recipes on how to cook the food. And it is so delicious that I have fallen in love with this place. I get 3 meals per week. each meal serves two people…me and my wife. So we are eating healthier and experiencing much less heartburn pain. You need to definitely try them out.

I will be posting the recipes that I have personally tried to great success. They are all gluten free, which in my case is the biggest offender of my acid reflux. Glutens!!! I will show you the ingredients as well as the recipes on how to cook each meal. There will some pictures for you to enjoy as well. I am also including a link to Purple Carrot so that you can go and try them out. At least you should look at their site and see if they will work for you. When you break down the actual costs with what you are receiving, it comes down to about $11.50 per person per meal. And that is pretty good and affordable…for my anyways. As I love to go out and eat at restaurants. And I don’t know of many places that I can get a GREAT Vegan meal for under $25 for the two of us.

Ingredients

  • ¼ cup beluga lentils
  • 14 oz red bliss potatoes
  • 6 oz sugar snap peas
  • 1 scallion
  • 1 lemon
  • 1 red bell pepper
  • 1 jalapeno - This is split between steps - This item is spicy
  • 3 tbsp vegan sour cream
  • 2 garlic cloves
  • ¼ tsp smoked paprika

Instructions

  • 1 - Rinse and sort the lentils. In a small saucepan, combine the lentils and ½ - 1 cup of water. Bring to a boil, reduce the heat to low and simmer, covered, until the lentils are tender…usually 20-25 minutes. Drain remaining water or add more if needed.
  • ***Hint – To ‘sort’ means look for and discard any debris that may be naturally occurring in the lentils. Example - stems or growths.
  • 2 - Add the potatoes to a large pot, cover with an inch of cold water and bring to a boil using high-heat. Cook until they are soft and fork-tender…usually 10-12 minutes. Drain the potatoes and let cool.
  • 3 - Thinly slice the sugar snap peas and scallions. Halve and juice the lemon. Combine the sliced snap peas and sliced scallion into a medium bowl with the lemon juice. Add 1 tbsp of olive oil and a dash of salt. Toss the snap pea slaw and set aside. Slice the red bell pepper into thin strips.
  • 4 - Deseed and mince the jalapeno and reserve just 1 tbsp for garnish. In a small bowl, combine the remaining minced jalapeno with the sour cream and a dash of salt. Stir to combine. Peel and mince the garlic.
  • 5 - Place the boiled potatoes on a cutting board and once they have cooled, use the palm of your hand to gently press down on each of them until the sides blister open. Heat a large skillet with 1 tbsp of vegetable oil over medium heat. Add the smashed potatoes and cook until golden brown and crispy…usually 3-5 minutes per side. Add the sliced bell peppers, minced garlic, butter and paprika, stir and cook for an additional 2-4 more minutes.
  • 6 - Taste the crispy potato skillet and add salt. Scatter the cooked lentils over the entire skillet. Serve family style, topped with the snap pea slaw and jalapeno sour cream. Sprinkle with the remaining minced jalapeno.

The breads or the wheat products are the absolute worst. BUT... since I have switched to eating mostly Vegan or more of a plant based diet, my Acid reflux has all but disappeared. If this sounds interesting to you, or if you just want to try more of a plant based diet, then I Strongly recommend Purple Carrot. Ingredients

  • 2 sweet potatoes
  • 1 scallion
  • 4 oz grape tomatoes
  • 1 lime
  • 1 cup corn kernels
  • 2 garlic cloves
  • 6 oz Lacinato kale
  • 14 oz of black beans
  • 2 tbsp vegan butter
  • 2 tbsp raspberry preserves
  • ½ tsp chipotle morita powder * this item may be spicy

Instructions

  • 1 - Preheat the oven to 425 F. Cut the sweet potatoes in half lengthwise. Place them all on a baking sheet and rub each half with 1 tsp vegetable oil and a dash of salt and pepper. Roast, cut side down, until the sweet potatoes are tender…usually 22-25 minutes.
  • 2 - Thinly slice the scallions. Halve the grape tomatoes. Halve the lime, juice one half into a medium bowl and cut the remaining half into wedges. Add the corn kernels, sliced scallions, halved tomatoes along with a dash of salt. Toss the corn salsa to combine.
  • 3 - Mince the garlic. Destem the kale and roughly chop the leaves. Drain and rinse the black beans. In a small bowl, add the butter, raspberry preserves and as much of the morita powder as you like or can stand. Mix this well into the Raspberry Chipotle Butter.
  • Hint: I’d recommend that you start with a very small amount of the Chipotle morita powder. It actually has a smokey taste that you may like or not.
  • 4 - Heat a large nonstick skillet over medium-high heat with 2 tsp vegetable oil. Add the minced garlic and cook until fragrant…usually about 1-2 minutes. Add the chopped kale and a dash of salt and cook until wilted…usually 3-4 minutes. Add the black beans and cook until hot…usually 3-4 minutes. Taste and add salt accordingly.
  • 5 - Flip the roasted sweet potatoes over and lightly mash with a fork. Add a dollop of raspberry chipotle butter. Divide the sautéed kale and black beans between large bowls and add the raspberry chipotle sweet potatoes. Top these bowls with the corn salsa and serve with the lime wedges.

I cannot tell you how much I absolutely love this company and the food they deliver. I admit that I do miss beef and chicken sometimes, but I can easily add those to these meals or even take a break from Vegan eating for an evening. I suffer greatly from Acid Reflux. Ingredients

  • 4 cloves of garlic
  • 2 onions
  • 2 red radishes
  • 1 avocado
  • 1 lime
  • 1 ½ tsp ground cumin
  • 3 tbsp tomato powder
  • 1 chipotle pepper in adobo
  • 8 oz of jackfruit
  • 6 white corn tortillas

Instructions

  • 1 - Peel the garlic. Peel and slice thinly the onions. Thinly slice the radishes. Halve the avocado, get rid of the pit, slice the flesh into thin slices. Cut the lime into halves and juice one half. Cut the other half into wedges. Squeeze 1 tsp lime juice over the sliced avocado and throw a dash of salt on.
  • 2 - Heat a medium saucepan over medium heat with a tbsp of olive oil. Add the garlic, 1 tsp of salt and just ¼ cup of sliced onions. Cook, occasionally stirring until you see brown in places…usually 3-4 minutes. Add the cumin, tomato powder and as much of the chipotle pepper that you can stand, ¾ cup of water and whisk it all very well. Add this to the saucepan and cook, stirring often until the Salsa Roja has thickened a little…usually 5-7 minutes.
  • 3 - Heat a large nonstick skillet over medium-high heat with 1 tbsp olive oil. Add the remaining sliced onions and add a dash of salt. Cook these, stirring often until you see brown in certain places…usually 5-8 minutes. Then add ½ cup of water, reduce the heat to medium-low and cook until the caramelized onions are lightly browned…another 3-4 minutes.
  • *** Hint: Don’t clean the skillet just yet, as we’ll be using it again.
  • 4 - Add the Salsa Roja and the rest of the lime juice to a blender and blend until smooth. Taste and add salt as you see necessary.
  • ***Hint: The Salsa Roja can be left unblended if you prefer a chunkier salsa.
  • 5 - Drain the jackfruit, pat dry and tear into pieces. Add the shredded jackfruit into the skillet with the onions and turn the heat up to medium-high. Cook and toss this medley often. Do this until the jackfruit is crispy in places, usually 4-5 minutes. Add ½ cup of the Salsa Roja and cook until reduced…1-2 minutes. Transfer the crispy jackfruit and caramelized onions to a plate.
  • 6 - Rinse and dry the skillet and return to medium-high heat with 1 tbsp of olive oil. Add 3 tortillas to the skillet in a single layer. Spoon in some jackfruit and caramelized onion on one side of each tortilla and then fold the tortilla in half. Cook until crispy, usually about 1 minute on each side. Divide the tacos between plates and top them with the Salsa Roja, sliced avocado and sliced radishes. Serve with the lime wedges.
